I don't think you can. The Playstation disc has its own format so I doubt that you could even read the disk and I am sure they use a different format for their sound files. Sounds in Doom are wav files so you'd have to convert them from whatever the psx is using to wav format which I think would be hard.
You could just record the sounds using a microphone and then edit them on your computer.
