Does anyone know how to change the title of your level that is
displayed on-screen after pressing tab to display the map of your
level.

Replace or edit the graphics. Use WinTex and go to the GFX section of the WAD and copy the entry structure for the WILV/CWILV graphics.

I have individual letters for cutting and pasting you could use.
