Anyone know if its possible to remap any colour not just green on the sprites?

No, that isn't possible in vanilla Doom. Only green is converted.

You must be talking about transparency? Sprites can be any color combination (using the DOOM palette of course).

The "transparency" is an artificial color so a program like DeePsea or Wintex can tell where there is "nothing". If you look, you'll see that DeePsea uses a different default than Wintex. Either can have an override to use a different color. DeePsea can also use a different index value.

DOOM doesn't care about the color.
