The articles for the map on the Doom wiki would usually contain a list of secrets. But it doesn't have an article for absolutely every map yet. ;)

I recently found a new Doom cheat that displays all hidden areas on the auto map....it obviously will not tell you were to find all the secrets, but it can certainly help you find some :)

When in automap type in iddt, if you type it in again is hows you were all the map objects are, which also includes monsters :)

You may try watching some UV Max demos, that is, demos on skill 4 (Ultra-Violence) will all monsters killed and all secrets found. Not every map is "covered", but most of them yes as for now.
