Is there a place in one of the .pk4 files where I can get to the cheats and change them?

I don’t think that it’s possible.
A quick look in the doom.x86 binary (for Linux) with strings and grep says:

> strings /usr/local/share/games/doom3/doom.x86 | grep -i "your memory"
your memory serves you well!

So, the cheat codes are hardcoded in the binary. I can’t help you.

It must be possible. I know they changed them in the In Hell mod.

I didn’t notice it.
If you’re right, check the inhell directory if there is something like a deh file.
