How would they be carried out? I know there's a slope thing, but I could never get it to work. I tried Z height and dummy sectors, but no dice.

You just have to put a slope thing on a vertex and set its Z height. All the sectors that share this vertex must be triangular, this is probably the reason it did not work for you.

There is an example wad at the bottom of this page.
