What do most mappers use for the config? I've heard lots of people use hexen instead of UDMF still. Is UDMF better than Hexen or vice versa? Also what difference is there really besides adding custom values for example a door you can set the speed and delay.

UDMF is better feature-wise. Less hacks.

People who keep using Hexen do so because they don't want to change their map editor to DB2 (possibly because they don't use Windows and don't want to go through Wine).

Wine reportedly doesn't run DB2 well - a lot of functionality is broken. Haven't used DB2 or Wine so can't say.
