A proud owner of both PSX Doom and Final Doom.
Aubrey Hodge's music in the PSX and N64 Doom games, I believe, was a perfect auditory analogy of the abstraction and horror that the PC version didn't portray quite as well in music, though Prince's score really pumps you up, and was good in its own way. It helped develop my tastes for ambient music. If it weren't for him, I don't think I'd like the console versions as much.
The colored lighting, as unnecessary as some may think it, was a nice addition to the game, and helped distinguish it from the PC version. The way the graphics were rendered added a nice grittiness to it all.
The first time I played this was when I was around the age of ten or so, before I learned that FPS can go to hell when playing certain games. I played them after a long break from PC Doom so I suppose I'm used to the lower FPS, don't bother me too much really. Though I haven't played through PSX Final Doom as much as the other one.
It might be nostalgia speaking here, but I prefer to play the original Doom on my PSX, plus I really like how the controller works with it. I love console Doom in general, except for the 32X version of course. Going off the topic a bit, I'll say Doom 64 is my favorite Doom game, played on the N64. It still takes me around an hour before I get comfortable with the controls (have to set up my own controls), but you can't beat Doom on a large flatscreen. ;)
