You use the -record command line parameter.

So, your command line would look like "Doom -warp ## -skill # -record demoname -maxdemo 1024"

When you name the demoname, don't use a .lmp extension - it gets added automatically.

The -maxdemo 1024 command allows 1MB of space for recording your demo. It's usually all you'll need. Otherwise, the demo cuts off after a few minutes.
