It's funny how divided people are on this phenomenon. From one extreme to the other as well as the in-betweens. Maybe it takes a certain acquired interest in video editing? Or a sense of humor that includes post-modern mental junk food?

I'd say more "retardedly amused". I'm sure most of the things you like would bore the hell out of me.
Actually, I think everyone has a level of being "amused by stupidity". I'm sure I'm amused by much stupider stuff than a lot of the people here, but I know my younger siblings will watch something and I'll be like "That's just annoying how do you find that funny?"

You're probably not watching the funny ones. YouTube Poop was briefly funny in 2007 and degraded exponentially from there as the genre was completely taken over by people who just didn't "get it," so instead they just inserted lolrandom humour, stolen jokes, LOUD NOISES, and 4chan memes. That said, some of my favourites happen to be fairly recent:
And I don't want to be the guy that says "you have to watch these things stoned"... but, you have to watch these things stoned. Historically, I haven't found it effective for the usual comedies people say that about, but for me it changes a YTP experience from generating a couple chuckles to full-on hysterical laughter.
EDIT: I saw most of those have been linked to, and I thought I would add something else. Though this isn't a YTP, it's in the same spirit, and probably one of my favourite instances in gratuitous quote mining.
Though I'm usually one for random humor (Arfenhouse, for instance), I've never seen the appeal of YTP (even the 'good' ones linked in this thread). The "based on regular source material but horribly edited in weird ways" just isn't the right kind of random. Quote mining can be funny, of course, but when they start cutting up bits of words and splicing them together to make that really distorted obviously-edited fakevoice, I quit. :P
Yeah, I've actually been making some of this YTP stuff since late 2007 (back when it was starting to get bigger in popularity), though in the past year or so I haven't made very many new remixes. I still like to watch them though. In fact I still like hanging out with the YTP community a lot.
I go by SkyGuy16 on youtube, perhaps a few of you might know my magnum opus:
Made this back in 2009, and people won't shut up about how awesome they think it is. Of course, I do think I did a good job at it, but the praise has gotten a bit tiring by now. :P
On topic, I just find it very cool and amusing to mess up and rearrange videos to where you're making something entirely new and different.
I'm not really a fan of the really fast-paced visual rapefest style (i.e. stuff like Imaperson's poops) which is a bit more popular these days, nor do I really like the meme-filled, lightly edited stuff that's also popular. *coughwalrusguycough*
I'm kinda more "in-between", I like watching and making poops that have a good amount of smart editing in them, but not to the point where it's overwhelming. Stuff from guys like ChemistryGuy, electicthecheese and RevFirst are good examples I think. There are some exceptions with what I like, but that's another story.
YTP obviously isn't for everyone, but if you just look in the right places, you may find some really creative and interesting stuff that you might like.
I never liked the title of YTP, but I confess, I, too, was a part of this scene at one time. I was never good at making them extremely well-done though with lots of special effects and whatnot because all I ever had was windows movie maker. I never really tried all that hard to make it funny, either...I think it was more something I did out of complete boredom and quite literally as an excuse to upload videos. Sometimes it's fun to confuse people. I did contribute to the Mysterious Black Dude fad that lasted a little while, if that counts as a sort of YTP...
