Ya so I know how to bring up the Palette while viewing the sprite but how to change the actual colours?

Select "Color Remap" from the Image menu (which will display a list of colours used in the image), double-click on a colour you want to change and enter the number of the colour you want to replace it with (best done in Edit mode so you can see the palette), click on "Perform Color Remap" when done. Keep a backup in case things go wrong.
