First post from my new PC! :D

Anyway, with Zdoom, if I pick a resolution bigger than my current screen, and even if I go back, it always seems to be on that resolution I picked when I restart the game. I have to go into the .ini and manually change it. Why is it doing this?

You have to set the new resolution as the default res. I think that's the solution...

Go to Set Video Mode in ZDoom, pick your screen res, hit Enter. Problem solved.

Well, my old problem was that I would pick 1024x768 and it was the default. So, I picked a higher one and it didn't look right so I went back to 1024x768. Next time I started Zdoom, the resolution was the higher one again. I didn't even make it my default.

Which version are you using? I recall that with older versions (e.g. 1.22) it was generally best to use the same resolution as your desktop. With the newer betas, that shouldn't be an issue.

At some point the "set default" got taken out - in the current beta versions, it automatically makes whatever you choose the default.
