Between private servers on STO, and public servers, there people playing at pretty much any given hour during the day. Seems like whenever I look at IDE these days, there's always a good chunk of people playing, and there's pretty much always a good number of people on STO as well... at least when the area the server is in isn't getting destroyed by bad weather, at least :)
