I know that in ZDoom 1.22 you can "trick" the engine into starting a 1-player coop game by using the parameter "-host", like so:
code: c:\zdoom>zdoom -host 1 [additional params]
This makes ZDoom set up a multiplayer game with only 1 player (you). I think it's still possible to do this in later versions of ZDoom, though I haven't checked. Hope this helps.
EDIT: Yup, it works in ZDoom 2.0.63a, I see no reason why it wouldn't work in later versions.
