Is there a console command in any source port that will trigger all linedefs and switches? (doors also perhaps)

Not likely. Such a thing would not be simple, and would have to emulate the linedef triggering code (because of global vars and complicated side effects).
It would not even have good testing benefit. Most linedefs would directly conflict with some other linedef (Open/Close, raise/lower).
