I think a little more clarification is needed. Usually when talking about HUD we are talking about the Head-Up Display which does not include weapons. I can't tell if you mentioned the "gun" just because or if that actually has something to do with the HUD. Also, are you trying to make HUD assets that will work with vanilla Doom or are you doing something in HD for a source port?

EDIT:
I think I should mention that mechanically the weapons are a HUD element but I just want to make sure you are talking about all of it or just the weapons.

Well, i'm not sure there will be a tutorial already for this. It is one of those things where either you've got what it takes to make them or you don't. I know that wasn't very helpful but it is the harsh truth.

I know i've seen some here on these forums but i can't remember how walkthrough-ish they were. You could always use google. I searched "fps weapon sprites" and got a screen full of good examples.

Are you an artist in any sense of the word? If not I just don't see this happening. Personally I think that if you can do perspective you should do just fine. If you can't, well, this is going to be a rocky road for you and you might be better off "barrowing" from somewhere else (i.e., a different game or even someone else's project).

The thing that will prove to be the most difficult which is something that i think most people fail at is perspective. Here are some tutorials on drawing perspective. I hope this helps.
