I like At Doom's Gate better than most new songs TBH.

Definitely a tie between these two.

I think I got the softest spot for what I feel are Evilution's best tracks: Sadistic, Smells like Burning Corpse and Death's Bells.

I'm also a fan of Aubrey Hodges' work on Doom. Now I can't pick a favorite track as a lot of it feels like background music, but he comes up with a few gems, like the Toxin Refinery theme.

The 3DO version had really cool music, imo.  It's a really fun alternate take on the original music.

And Suspense!  I always forget about that track.  It's so creepy and dark I just love it, probably as much other two I already mentioned.  Every once in a while I like to listen to my own remix of it.  It's one of those songs where it's like, "I did that?" for me.
