Oh wow this brings me back to my HS days...Even though I read the manual too I still gave them my own names. I usually gave them names due to their appearance or what they looked sorta like.

Zombieman - Buzzcut
Shotgun Guy - Baldy
Nazi - Happyface
Heavy Weapon Dude - Tyrone (Cuz he looked like a friend of mine in HS)
Imp - Demon
Demon - Horned Demon
Spectre - Ghost
Cacodemon - Strawberry
Baron of Hell - What the fuck Minotaur dude die!!! Before the Super Shotty this guy was scary as hell to fight for me with a shotty. Sometimes I called him 16 cuz I would always count the shotgun hits it took to kill him.
SpiderMastermind - Krang
Cyberdemon - Oh shit!
Hell Knight - I think in the manual they said something about him being similiar to being a T-Rex or something so I just called him T-Rex. Or was that the Baron? Oh well...lol
Pain Elemental - Killer Cocoa Puff
Revenant - Skeletor
Arachnotron - Krang's baby
Mancubus - Aunt Kathy (lol)
Arch-Vile - Smarty Pants (Big head)
Boss Brain - Master Demon

I called them in greek which have funny names but I'll have the greek names for the greek guys (because they are funny) and the translation too.

zombieman = στρατιωτάκια (little millitary men)
shotgun guy = σοτγκανάδες (shotgunners)
imp = ψαρωκολιάρηδες (psarokola - because of the sound they made)
demon = ροζ γουρούνια (pink pigs)
cacodemon = τομάτες (tomatoes)
pain elemental = μελιτζάνες (pumpkins)
mancubus = αμπτιμαχάλ (abdi machal - because of the sound they made)
heavy weapon dudes = τακατάκες (takatakes - they shoot stuff fast: taka taka taka taka)
arch viles = ο θεός (the god - because he can ressurect stuff)
lost soul = σκελετάκια (tiny skeletons)

I know, silly..

You seem to think food a lot when you play.

Reading through this thread, we've at least come to the conclusion that Cacodemons bear a striking resemblance to tomatos. =P

I had devoured videogame reviews so knew a lot of names, though i called the Zombiemen "Pistol" guys" and the Sergeants "Shotgun guys". I was also scared of Cacodemons because i had read that it took TWO rockets to kill them (whoever wrote that paticular review had either signed a confidentiality agreement or had only played a few select levels, they didnt mention Barons of Hell at all). Later i learned thier pain chance is so high you can chainsaw them without worrying

I didn't have the manual when I played the shareware version of Doom, so this is what I called the monsters.

Soldiers and sargeants - troops
Imps - chimps (I thought they looked like chimpanzees for some odd reason.)
Demons - demons (I actually got it right!)
Spectres - cloakers
Barons of hell - big bear-like things

Here was what my dad called some of them:
Zombies: Zombies
Demons: Pink boys
Arachnotrons: Spiders
Mancubi: Fat boys
Arch-Viles: White monsters

I can only really remember 2 of them:

Demons = Pinky dinks
Cacodemon = Cat-head

For the most part, I seem to have always known what the actual names are.

Zombies -> Possessed Dudes
Brownie -> Mutated Dude (because they don't sound that different from the zombies)
Pinky -> Wolf-Bear-Pig Mutant
Spectre -> Predator Wolf-Bear-Pig Mutant
Baron of Hell -> Big Screamer Demon Overlord (they are pretty dang loud)
Cacodemon (seen in the page that tells you to get the registered version) -> Laughing Demon Overlord

After that, all the shareware versions of Doom came with some crappy text files that explained the enemies, and Doom 2 came with an instruction manual.

For the most part I just describe their attacks, because when trying to beat the game as an inexperienced player, that was all I cared about. The exceptions are:

Demon-Pink thing
Spectre-Invisodemon
Lost Soul-Flaming skull
Cacodemon-Floating head
Mancubus-fatty
Archvile-fire guy
Revenant-skeleton
Nazi SS-Nazi
Commander Keen-lynched hippie (Had no idea what it was supposed to be, never heard of Commander Keen before.)

I coined the name when showing my friend the super secret level,( although not how to get there, hehehe...) and he asked me what the Commander Keens were. I didn't know so we came up with lynched hippies because of the bright colors.

I first got this on PSX, so after reading the manual instead of doing schoolwork in class, I knew the names of pretty much everything. Still, didn't stop me and a friend shouting out random names during our many link-games:

Zombieman: Pistol-ponce
Shotgun Guy: Shotgun zombie
Heavy Weapons Dude: Angry Chinaman
Imp: Chocolate Men
Demon: Horny Pig (often followed by a "Hurr...")
evenant: Skeleton warrior
Pain Elemental: Shit-dispenser
Lost Soul: God-damned-motherfucking-son-of-a-bitch!! (Or similar: yeah, only after it killed either of us by surprise)

There were others, but those are the ones I remember most. Then I finally got round to buying the PC version (after years of shareware clowning around), and stopped using nick-names altogether.

I knew most of the names, but sometimes I called them with different names.

Former Human - pistol zombie

Shotgun Guy - shotgun zombie

Chaingunner - chaingun zombie

Spectre - invisible demon

Lost Soul - skull

BTW, I always spoke those in portuguese, which is my native language.
