Any idea how to change the name of a level?

Yes. You either have to use a DeHackEd patch (which newer Boom ports support by using the DEHACKED lump) or MAPINFO to rename a level. Refer to the Boom documentation (at the teamtnt site) or the ZDoom documentation (at the zdoom org wiki) for how they work. Rest assured they both go beyond Doom Builder's scope.

Or SLADE3, if you want to use utilities that are still being developed and maintained rather than those that have been abandoned for a while and whose bugs will never be fixed since nobody around here codes in Delphi.

DeHackEd to replace the automap names + custom graphic lumps to replace the intermission names is the most-compatible way you can go.

It's also more complicated, since you can't give names longer than the replaced names, and you have to build up all the pictures (there's a tool called Doomword that can help with that, though).

What ports actually have that limitation? I think that only Chocolate Doom does.

All the ports that support DeHackEd but not BEX will have that limitation, won't they? The DeHackEd method requires strings with a shorter or equal length. BEX allows to just define the new strings.

Can you name such a port? Even in Chocolate Doom, the limitation in artificially imposed and can be turned off with magic words in the comments.

Speaking of Doomword, is anyone willing to share it? aap is not hosting it any more in his website, and it would surely beat having to manually paste letters and improvise with those that didn't originally exist in the font.
