Is there a way to play Multiplayer over IP, or is server creation unavoidable?

I've always been trying to see how this would work, and I wasn't sure if there was a way to play Doom over an IP Address or somewhere where I don't have to make a server to play my wads with other people, if they have them.

Or is this unavoidable, having to make a server?

Not at all - original Doom co-op and DM was all done over LANs. If you want an easy way of doing it, most launchers can streamline the process to picking a couple of options and entering the IP address of the guy starting the game (not hosting, mind).
