Not really familiar with wintex (I find it a little clunky to use) but deepsea allows exporting of music in the midi format using the export dialogues (F7 key). AFAIK this is not limited/disabled in the shareware version.

Just do "save entries to file", it automatically converts it to .mid

1.Start wintex
2.Select the game you want in the "current game" area at the
top
3.In the "Pwad to examine or modify area" at the bottom, point
the program to the directory where your Doom or Doom2 game
is installed (In the right hand box)
In the left hand box, highlight the main wad you are interested
in (Doom.wad or Doom2.wad whatever the case may be)
Click the "edit pwad" button
4.At the bottom of the new window that comes up, there is a row
of little square buttons at the bottom. Click the button with
the little musical notes on it.
5.To the left, a list of all the music tracks will appear
Highlight one of the tracks and it will start to play the music.
Click on "edit" from the menu bar at the top and select "save
entry to file" The music track that you highlighted will be
saved as a midi file in the folder of your choice.
