The reason why Cyberdemons and Spiderdemons can't be killed by barrels is because they're hardcoded to be completely immune to splash damage.

Ghost monsters, on the other hand, can only be killed by certain few things, including barrels and NOT including most of the player's weapons, so they might go perfectly with your idea.
