Gravity, friction, collision, explosion, this kind of things. The Doom engine has its quirks, the Quake engine has its quirks, they're not the same quirks.

There's a number of things you can change about the physics with ZScript to make it more Quake-like, but I doubt it would be possible to get it 100% exactly like Quake. You'll still have fundamental differences because Doom is a sector-based engine while Quake is a brush-based engine.
